What happens to old projects?

I do a lot of hand-lettering for work and for fun. Mostly with paint or brush pen. Since I scan most project work in, there's really no need to keep the paper. Except that I like to use both sides, so that I don't waste it. I also don't seem to want to throw it away. It can be very interesting to me to flip the page over and see how different the two sides can be.
